We hear frequently that one reason why someone hasn't adopted a whole food, plant-based diet is because they think it will take quite a bit of time to make plant-based meals. 

This recipe is entirely whole food, plant-based, is quick to make, and most importantly is delicious.

Vegan BBQ Bowl

Plant-based BBQ Bowl

Ingredients

  • 2 cups cooked quinoa
  • 4-8 oz oyster mushrooms shredded with a fork
  • 3/4 cup plant-based BBQ sauce
  • 1 cups chopped lettuce Veggies for toppings

Instructions

Step 1: Layer quinoa and mushrooms in a bowl
Step 2: Top with lettuce
Step 3: Add in any desired toppings like corn, avocado, green onions or sprouts Step 4: Drizzle a little extra BBQ sauce on top

Notes

Be sure to use oyster mushrooms so that you get a nice, shredded texture. Other mushrooms won't shred as well.
